The smell of fresh bread is, in my opinion, well up there with some of the best smells in the world. Along with freshly cut grass, newly washed linen and summertime BBQ’s, home cooked bread really is one of the most comforting smells. I’ve always found it fascinating how a single smell can somehow transport us back to a certain memory from our lives. For me, the scent of freshly baked bread reminds me of occasional trips to the local bakery after school with my Mum. Although fresh bread was never mine or my sister’s choice of treat, the smell will always remind me of these times.
One year ago today I posted my very first blog post to Always Make Thyme. I had wanted to start up a food blog for a while, but never really had the confidence. I knew that I loved to cook but I didn’t think that anyone other than me would ever be interested in my recipes or what I had to say about them. Finally I plucked up the courage, paid for my domain and began to set up Always Make Thyme.
It’s almost the start of a new year. As of tomorrow 2014 will be the past and we would have all stepped foot into 2015… And with that we will most probably be joined by some horrendous hangovers! To thank you all for reading for the past year I thought it was only right that my last recipe of 2014 should really show my appreciation for your loyalty. Therefore I give to you the best gift anyone could ever want for the beginning of 2015, or any year in fact… The best hangover cure out there, my Ultimate Breakfast Bake!
Life is full of making decisions. Most are easy like choosing between a bath or shower in the morning, but there are a few occasions in our lives when we are faced with really tough decisions. We stress ourselves out trying to make the right choice and regret it later when we feel we haven’t. We beat ourselves up for days and weeks, and maybe even months and years over a bad decision, only to arrive at that same crossroad once again hoping that this time will be different. I’ve found myself at this stage so many times before, but the other day I finally decided enough was enough and that I will not be disappointed any more… From now on when the waiter asks what dessert I want I will have both the cheesecake and the chocolate brownie!
Baking is a fairly new thing to me. For years and years the thought of baking actually terrified me. Unlike cooking, baking is a complete science and let me tell you now, I wasn’t very good at science! The thing I love most about cooking is that you can adjust the recipe as you go along. If it doesn’t have enough spice you can add more chilli, if it isn’t seasoned enough you can throw in a little more salt. With baking you don’t know how it tastes until that cake is cooked, by which time it’s way too late to add the 150g of golden caster sugar you forgot to add at the beginning! Basically you have no control when it comes to baking. Once that cake is in the oven there is nothing you can do but just sit and wait…
