It scares me how quickly time passes. I vividly remember being sat at my laptop around about a year ago writing up my blog post for my Roasted Pumpkin Pasta recipe. The reason I remember this particular post so well, other than it being one of my favourite recipes, is because I remember speaking about my undying love for autumn. Unlike most others who hate this transition from the long, warm summer evenings into rainy, cold autumn nights… I love it!
After a long (slightly too long perhaps) blogging break, I am finally back with some brand new recipes! I think it’s important sometimes to give yourself a bit of “you” time. Time to relax, time to catch up with friends and family, time to begin some new hobbies and make some exciting changes to your life. Although I absolutely love talking and writing about food, a couple of months off was exactly what I needed. Not only has it given me time to unwind and come back with a fresh, new outlook, but it has also given me tons of time to create and research lots of brand new and pretty tasty recipes for you guys to try. I thought I’d begin with one of my favourites from the past couple of months.
There are just certain dishes that you want to eat in this cold, winter weather. On a cold night all I want to do is chill in my flat with my onesie on and eat a big bowl of comforting food, and when it comes to comfort food risotto is most definitely high up on my list. You just can’t beat it. Risotto is my go to meal when I don’t know what else to cook, and despite what some may think, it’s actually fairly easy to make. All that is required is some good quality ingredients along with a bit of love and attention and you’ve got yourself a beautiful bowl of risotto.
Autumn has arrived. As the dark evenings roll in and the weather takes a drastic change for the worst, I just can’t help but love this season. Of course I love it when its hot and sunny outside, but for me the idea of spending my days off snuggled on the sofa in a onesie eating a large bowl of pasta and watching films is just as exciting. Call me boring, I don’t care. I LOVE autumn.
Who doesn’t like ice cream? No, seriously, who doesn’t? I don’t know a single person who doesn’t like it. I’ve heard the odd person (and I really do mean odd) complain from time to time that it’s a bit too cold – clearly they don’t quite understand the concept of ice cream – but apart from this quite frankly ridiculous complaint, I’ve never heard a single person express any kind of dislike towards this amazing creation. And why? Well, everyone just LOVES ice cream!
