I am a firm believer that chorizo should be used as much as possible. Whenever you think a dish is lacking something, the chances are that it probably just needs a bit of chorizo thrown in. I mean I wouldn’t recommend throwing it in a trifle or a vegetarian curry but you catch my drift, right? Chorizo is just awesome and can be used to enhance so many regular dishes into something really special.
After a long (slightly too long perhaps) blogging break, I am finally back with some brand new recipes! I think it’s important sometimes to give yourself a bit of “you” time. Time to relax, time to catch up with friends and family, time to begin some new hobbies and make some exciting changes to your life. Although I absolutely love talking and writing about food, a couple of months off was exactly what I needed. Not only has it given me time to unwind and come back with a fresh, new outlook, but it has also given me tons of time to create and research lots of brand new and pretty tasty recipes for you guys to try. I thought I’d begin with one of my favourites from the past couple of months.
Anyone who knows me well will know that I have a slight obsession with all things to do with South East Asia. Yes I admit it, I am one of those people who will quite often talk about my travels even when not particularly relevant to the conversation. As a matter of fact, I think it is quite a talent to be able to turn literally any conversation in the world into something Asia related, even if I am the only person who thinks so.
Sometimes you begin cooking a dish and think to yourself, this is going to be pretty average. It’s not going to be anything special. You taste it as you’re cooking and you feel disappointed. It’s not the flavour you wanted, the right consistency, it’s just not how you imagined it to be. This salmon dish started off as one of those dishes for me, but then something happened, I’m still not sure what, but it just ended up tasting amazing! Exactly how I wanted it to taste and better.
