It scares me how quickly time passes. I vividly remember being sat at my laptop around about a year ago writing up my blog post for my Roasted Pumpkin Pasta recipe. The reason I remember this particular post so well, other than it being one of my favourite recipes, is because I remember speaking about my undying love for Autumn. You only have to look at a handful of recipes from my blog to know that I am heavily influenced by Italian food. For me, nothing quite beats a bowl of steaming hot pasta tossed with a simple, yet amazingly tasty homemade sauce. Throw on a bit of parmesan and serve with some warm toasted ciabatta with a drizzle of extra virgin olive oil… I honestly can’t think of much better than that.

Cod Chorizo and Chickpea Stew

I am a firm believer that chorizo should be used as much as possible. Whenever you think a dish is lacking something, the chances are that it probably just needs a bit of chorizo thrown in. I mean I wouldn’t recommend throwing it in a trifle or a vegetarian curry but you catch my drift right? Chorizo is just awesome and can be used to enhance so many regular dishes into something really special.

Roasted Pepper Pork

The other day I was asked a very difficult question. If I had to survive on just three foods for the rest of my life what ones would I choose. As someone who loves pretty much everything this was really quite hard for me. In the end, after much thinking I decided on my three… sausages, butternut squash and pasta. Since answering this question I have changed my mind several times, halloumi, bacon, chocolate, proscuitto, avocado, bread… the list just goes on and on. There is only one food that has remained on the list and is definitely not going anywhere, and that is PASTA!

Chickpeas on Toast

Chickpeas really are a fantastically versatile ingredient. I use chickpeas a fair amount, mainly in currys and stews and sometimes when attempting hummus, although I just cannot get that recipe right. It’s one I’m working on though. Despite knowing that chickpeas are a great ingredient, it wasn’t until today that I really came to appreciate the vast versatility of the humble chickpea.
