We all have our guilty pleasures when it comes to food. Mine, like many others out there, is cheese. Apart from blue and goats, I am a big fan of every other type of cheese I have so far come across in life. This ultimate toastie is a celebration of my current favourite cheesy combo!
Lately I seem to have developed a small obsession, and probably quite an unhealthy one, with Taleggio. For those who are yet to discover this amazing cheese, then you really need to get on it. It’s soft, creamy, perfect for melting and just generally, bloody delicious.
Since my obsession came about I’ve tried it in pasta sauces and on bruschetta – both I highly recommend. But it’s in a toastie where Taleggio is at it’s best! Melted with mature Cheddar and Red Leicester, this is probably the best cheese toastie I’ve ever made… and maybe ever eaten. You be the judge of that though!
50g unsalted butter
25g Red Leicester, grated
25g mature Cheddar, grated
25g Taleggio, roughly chopped
2 thick slices of good quality bread
Serve with BBQ sauce – I like Red’s!
- Mix the three cheeses together and then spread between the two slices of bread, and sandwich together.
- Melt the butter over a medium heat in a frying pan. When bubbling, carefully place your sandwich in the pan. Put a small plate on top of the sandwich and then weigh it down with a tin of soup, or something of a similar weight. This will help to keep the toastie together, as well as helping it melt quicker!
- Cook for around 3 minutes, and then carefully turn over and repeat the same process of the other side for a further 3 minutes, or until golden on the outside and melted in the middle.
- Transfer to some kitchen paper to soak up some of the excess oils and then slice in half. Serve with a generous amount of BBQ sauce, or whatever takes your fancy.
